Baked Apples

Super quick and easy recipe here!  
I make this several times a week for breakfast, as a side dish or if I want something sweet.  
"Baked" apples in the microwave!


1 medium apple 95 cals
1/4 cup light granola or rolled oats 70 cals
1/4 tsp corn starch (optional)
1/4 tsp cinnamon
dash ginger (optional)
1 packet Truvia (or other sweetener, optional)
1 quart ziplock bag


Cut up the apple and shake it all up!


Leave the top open just a bit to vent, then microwave standing up for 2 mins!
Instant deliciousness!
Total cals = 165!


Yummy with a scoop of vanilla ice cream for a lighter dessert ;)

I also take this to work.  I cut up the apple and store it in the ziplock bag, then I put the rest of the ingredients in another bag.  
When it's lunch time at work, I mix it up and microwave it right there.
The heavenly smell usually brings people into the break room to see what's up.

Running is a Privilege


In case this needs reiterating . . . I am a slow runner.
I'm okay with that, it takes time and patience and I am getting faster.

However, today I was running the track at the gym
and this older man was walking very fast.
It took me FOREVER to pass him . . . RUNNING!
(Granted the man was probably 6'5" and I'm 5'4")

I came along side him, ripped the headphones out of my ears and said:
"You walk as fast as I run and it's driving me crazy!"

He smirked back and said:
"Be grateful you CAN run"

Yes sir!

I stuck those headphones back in my ears and just kept running, grateful that I could.

Try

Pink's song "Try" has gotten me through a good many tough runs.

I heard it first on "The Biggest Loser" and then went searching on You Tube!

Chorus:
Where there is desire there is gonna be a flame,
where's there is a flame someone's bound to get burned.
But just because it burns doesn't mean you're gonna die.
You gotta get up and try, try, try!

Here's the deal:  Desire is what makes me go out and sweat, run longer
 than I thought I could and lift more weight than before.
Desire is what ignites the flame to push.  
Yes, it's exhausting and it burns "but just because it burns doesn't mean you're gonna die."

When I'm out of steam and I don't think I can go any further I remember this:



Remember your desire and why you started in the first place.
You can go further, faster and lift more.

Adventures in Onederland!

I've entered ONDERLAND!!!!!!!

I realize for most people being below 200 lbs is normal,
 but remember I started at well over 300 lbs.  

Onderland was truly a mysterious place I had only heard of, dreamt of,
and fantasized about.

Much like the wonderful land of OZ


In my entire adult life I've been here once, my Senior year of High School.
Trying so hard to fit in and get thin I started taking diet pills (ephedra)
and doing a TON of cardio at the gym while restricting my
calories insanely low.

I looked thin, but my heart raced, I was either hyper or exhausted and
hated the gym.

I am proud to say this time in ONEDERLAND
I am fit, strong, balanced and healthy!
I arrived the slow/sure way and will just keep going down the
"yellow brick road" all the way to the Emerald City!

Here's to the last 48 lbs!
